People think homemade soup is hard and time consuming. Here
is an easy fast soup to make the whole family will love. My husband is under
the weather and I am a little bit. Even my poor cat is sneezing. So I made a
big pot of really hearty filling hot soup. It is so easy to do. The amount of ingredients
depends on how much soup you choose to make and how much of each item you may
like.
Step 1 – Peel as many potatoes and carrots you want for your soup Place them in different
pots filled with water. Now simmer until they are soft and cooked through.
Drain each.
Step 2 – Fill your soup pot with 2 large boxes of vegetable
stock. Now add the same amount of water. If you are making a really large pot
of soup, (it can be frozen), add as many boxes of stock and water as it takes
to fill your pot. Now add the potatoes and carrots. Also add any other veggie
you want in your soup. I add corn and peas. You can add salt and pepper to taste. I do not
add spices. You get your flavor from the veggies.
Step 3 – Simmer for about 45 min. Soup will be very thin. To
thicken it up put a cup of the soup in the blender and puree. Now add that back
to your soup pot. Keep doing this until your soup is the thickness you desire. Stir, turn off heat and let sit for a few
hours. That is it. Thus soup is good the
day you make, but it is better the next day. Enjoy!
Not only is this very easy, it is also very figure friendly.
Because you do not thicken with flour or add ay cream the calories are very
low.
