6 slices turkey bacon, diced
1 1/2 lbs ground turkey or ground beef
1 cup fresh spinach, chopped
1/2 cup chopped celery
1/2 cup chopped green onions,white and green parts
2 garlice cloves, minced
1 TBS tamari
1 tsp dried thyme
1/4 tsp dried rosemary, chopped
1/4 tsp sea salt
2 TBS whole grain mustard
3 TBS whole grain mustard
2 TBS yellow mustard
2 1/2 TBS freshly squeezed lemon juice
1 pkt Truvia or Stevia
2 TBS water (optional)
Preheat oven to 375 degrees. When copping your veggies, cut them small. It will be easier to form smooth meatballs.
Heat the bacon in a nonstick skillet for 5 minutes. Set aside to cool. Combine all the ingredients (including the cooled bacon) in a bowl and mix until just combined.
Form into 36 meatballs and place them in a baking dish. Bake for 25 minutes or until done.
To prepare mustard sauce: Whisk all the ingredients together until well-combined.
